Bumper Crop of Summer Tomatoes?You can easily make your own tomato bruschetta topping for preparing these tasty snacks. Combine 1 cup chopped seeded tomatoes (any kind - cherry, pear, heirloom) with 2 Tbsp. chopped red onions, 2 Tbsp. extra virgin olive oil, 1 tsp. red wine vinegar and a few slivered basil leaves. Let stand 5 min. Use 1/4 cup of the homemade bruschetta topping to prepare this recipe. Refrigerate remaining bruschetta topping for another use.
SubstituteSubstitute 1/4 cup crumbled feta cheese for the ricotta salata cheese.
