Fried Guacamole Balls Recipe

Ingredients

  • 30 TRISCUIT Cracked Pepper & Olive Oil Crackers, crushed, divided
  • 1 egg, beaten
  • 1 pkg. (12 oz.) prepared guacamole
  • 1 qt. (4 cups) oil
  • 2 Tbsp. thick and chunky salsa
  • 24 black olive slices

Instructions

  • Reserve  6 Tbsp. cracker crumbs for later use. Mix remaining crumbs with egg and guacamole until blended.
  • Cover  rimmed baking sheet with foil. Scoop guacamole mixture into 24 balls; place on prepared baking sheet. Freeze 15 min.
  • Roll  guacamole mixture into balls, then roll, 1 at a time, in reserved cracker crumbs until evenly coated. Return to prepared baking sheet. Freeze 45 min.
  • Heat  oil to 375° F. Add guacamole balls, in small batches; cook 2 min. or until golden brown. Drain on paper towels. Serve topped with salsa and olives.

Recipe Tips

NoteThese delicious guacamole balls can be prepared ahead of time. Freeze up to 1 week. Remove from freezer and fry as directed in recipe. Top with salsa and olives.
